I’ve struggled for awhile with how to best organize my credit cards

Currently they just all sit inside a drawer inside my house (except for the 2 or 3 that I am carrying at any one time)

While the promotion is targeted towards staying at hotels, there is also a mail-in option

You can enter 94 times, and each entry is guaranteed AT LEAST 500 IHG points
